Three of my passions are food, movement, and teaching!  I guess you could say I am a self-proclaimed “Fit Foodie”who wants to educate people on the enjoyment of eating well and exercising efficiently.

My first attempt at teaching was the summer after I graduated from college.  I developed, produced, and taught Nutrition and Cooking 101 to high school students of the Upward Bound Program, a nation-wide education outreach for youth.  The class was a huge success amongst the students who especially enjoyed the “Cooking Lab”.

My own satisfaction with nutrition came later in life, when I discovered in my mid-20s I was gluten intolerant.  Thirteen years of sporadic stomach issues,   mis-diagnosed was finally explained!!  I had literally seen doctors in the states, England, Spain and Uruguay and no one could give me a good reason and treatment for my conditions.  In August 2008 I decided to give up gluten and see what happened.  Thank God I had the discipline to eliminate different things from my diet and "experiment" until I found the culprit.  I had I am happy to say that this August of 2015 marks my seven year gluten free anniversary!!!
